Method

  1. Chopped onion, thyme and slit green chilies softening in a cast-iron pan.
Onions doing their slow, glassy thing.

    1. Get the onions glassy

Patience here. Glassy onions, not brown ones.

  2. Chili powder, turmeric and ginger-garlic paste spooned over the softened onions in the pan.
    Spice party. Everyone's invited.

    2. Spice it up

Yes, it looks like a lot of spice. Trust it.

  3. Tomatoes simmering into a thick red sauce with curry leaves floating on top.
Curry leaves in. Smells like home already.

    3. Let the tomatoes melt

    Curry leaves are non-negotiable. Don't @ me.

  4. Four eggs poached in the red tomato sauce, the yolks still bright.
Little sunny lids, tucked in for a nap.

    4. Crack in the eggs

Resist the urge to poke them. They know what they're doing.

  5. The finished pan of egg chutney with coriander on top and torn bread beside it.
    Flip, garnish, tear bread. Done.

    5. Flip, garnish, serve

Bread first, roti if you're feeling fancy. Mop up every last bit.
